Callie Speer, pastry chef mash-up genius, is leaving Swift’s Attic, Delish, and yet-to-open Wu Chow. There is no word on what she will be working on next. Lisa Matullis-Thomajan, owner of the Speer-revamped bakery Delish, will take over her position at Swift’s Attic. Matullis-Thomajan is also the wife of Stuart Thomajan, co-owner of Swift’s Attic and founder of hospitality company The Chameleon Group. There will be new changes to the menus, but Speer’s nostalgic popcorn and a movie will still be available.

Speer was part of the Swift’s Attic team since it opened three years ago. The Chameleon Group also oversees Wu Chow, set to open this fall.

Update, September 21, 11:45 a.m.: It was announced today that Speer is joining Hotel Van Zandt's anticipated restaurant Geraldine's as its new executive pastry chef. She replaces the original pastry chef Kyle McKinney, from Barley Swine. Geraldine's is still on track to open in October.
