Keenan Goldis, the mastermind behind shuttered Goldis Sausage Company, is now part of the team at Smokey Denmark. Based in the meat shop’s food trailer, he’s working with pitmaster Bill Dumas to create special links. One of his first creations is the Iffy’s Sausage, made with lamb, beef, hatch chiles, mango, and a vindaloo spice mix.

During his days at Goldis Sausage Co., he conceived the ice cream meat sandwich and encased Thanksgiving dinner. He shut the trailer down earlier this year to focus on making the switch to wholesale sausage production. In April, he hinted at making sausages again in April. As of now, there are no plans to reopen. Update, August 11, 5 p.m.: Eater reached out to Goldis, who said, "Eater reached out to Goldis, who said, "I don't have any immediate plans to re-open Goldis Sausage Company, but there is a strong chance that at some point in my life, I will re-create it. Right now I'm just focusing on (hopefully) creating some really fun/creative/fancy sausage flavors for Pitmaster Bill and the Smokey Denmark Food Truck."
