The new Dripping Springs bar and restaurant Proof and Cooper, which opens on Saturday, July 4, will feature picnic-style fare, beer, and cocktails. Eater got a sneak peek at the bar menu, which focuses on different angles on classic drinks. The Majarita is a sour made with mango and jalapeno, and the Augustus takes on a mint julep with a peach-habanero whiskey. Texas liquors are mostly used, like Treaty Oak and Waterloo Gin. There’s also the intriguing Nebraska, a smoked corn sour. Check out the full menu below.
Helmed by the team behind The Blackheart and chef Russell Dougherty, the menu will include fried chicken, deviled eggs, burgers, and more. Eventually, the upstairs will house a monthly supper club and members-only whiskey library. The restaurant will debut with a grand opening party starting at 4 p.m. Regular hours will be from 4 p.m. to midnight every day.
