After the departure of Mat Clouser and subsequent promotion of Zack Northcutt to executive chef, the Swift’s Attic team is announcing Josh Madden as the new sous chef. "He was on the opening team and helped us build the restaurant," says Northcutt. "He has worked every station for the past three years and has helped us develop many of the dishes we have been serving ever since. I am excited for him to take on a management role as we move forward building the new team."
Born and raised in Central Texas, Madden has been interested in food from an early age. He attend the Culinary School of America in San Antonio, and worked at Jeffrey’s right out of culinary school before joining the Swift’s Attic crew.
