Torchy's Tacos has rapidly expanded within the state of Texas since starting out in a trailer on South First, and they've finally decided to take their tacos across state lines. Eater Denver reports that Torchy's will open as many as five locations in that city over the next few years; the first will be in a former Arby's near the University of Colorado campus, slated to open in early fall.
The decision to expand to Denver first was driven by customer feedback. In a press release, founder Mike Rypka says, "Our demand and development is sourced largely by our fan base." Torchy's will also add Texas locations in Tyler, Richardson, Sugarland and Plano, as well as their South Congress flagship in 2015.
Austin-Denver chain cross pollination is an undeniable trend. The Alamo Drafthouse and Hopdoddy had both hit Denver, and Snarf's Sandwiches, Punch Bowl Social and Infinite Monkey Theory Winery have all opened or will open soon in Austin.
