Head baker David Norman's creations for beer garden and bakery Easy Tiger appear in cafes and groceries across the city, and his gluten expertise has now garnered a cookbook deal. Ten Speed press has picked up Bread on the Table, which the publisher describes as "a collection of bread and baking recipes from around the world, plus menu ideas for incorporating homemade bread in globally-inspired meal." The book is slated for spring 2017.
The beer garden's in-house bakery has been a breakout success since Easy Tiger opened in 2012. The restaurant's planned second location in The Linc will feature a massive baking space to fulfill wholesale orders for clients ranging from Whole Foods to East Side King. Norman often jokingly refers to himself as the ELM Group's "head dough puncher" and oversees baking operations for the wide-ranging restaurant group.
