Modern Southern Olamaie’s co-executive chefs Michael Fojtasek and Grae Nonas were both named as two of Food & Wine's Best New Chefs for 2015. The duo hosted two intimate dinners at the magazine’s Chef’s Club in New York on March 2 and 3. The menu included country-fried monkfish, kil't white button mushroom salad, and smoky hen of the woods. In order to qualify for the title, candidates must have been in charge of their kitchens for five years or less.
Fojtasek and Nonas worked together previously as sous chefs at Son of A Gun in Los Angeles. The pair held a series of pop-up dinners leading up to the opening of the Olamaie in late August last summer. Last year, Paul Qui was named a Best New Chef.
