The Brewer’s Table Will Bring Wood-Fermented Beer to East Austin

Beer vet Jake Maddux and Foreign & Domestic owner and chef Ned Elliott are uniting to open The Brewer’s Table, as reported by Austin 360. The restaurant and brewery will focus on wood-fermented beers and wood-fired food. The reason Maddux wanted to center on wood because, he told Austin 360:

There’s nothing like wood. It adds so much character [...] There’s literal history because it’s carbon from the past. I think it adds a nice bit of life to food and beer.

Maddux, currently previously the beverage director of Salt & Time as well as alumnus of Thirsty Planet, Anchor Brewing, and New Belgium, is overseeing the brewery aspects while Elliott is crafting the cuisine. While working on this, he will still run his North Loop restaurant.

The Brewer's Table's space on East 5th Street and Springdale Road will include an outdoor area with a children’s playground. Indoor seating ranges from booth, banquette, to bar, and the namesake brewer’s table. It will be designed by Kevin Stewart, who also worked on Dai Due, Emmer & Rye, and Peached Tortilla. It is projected to open in 2016.
