Red Star Southern, the cheeky Southern food trailer from Erica Waksmunski, is up for sale, according to a Craigslist post. This doesn’t mean the hot fried chicken would go away forever. The chef and owner told Eater she is looking for a larger trailer to keep up with customer demand. Red Star remains open until the sale for $40,000, which includes all equipment.
Waksmunki, who also runs the pastry program runs the pastry program for all four Parkside Projects restaurants, opened the trailer last summer with a very entertaining video. She kept up the laughs with blunt job postings, funny Instagram, and the infamous mascot Ol’ Shitter Jim. She even introduced a nine course chef’s table tasting menu with a "food trailer" theme.
The truck moved from its original home at the Grackle to Wonderland this summer. The bar is under La Corsha Hospitality Group, which also oversees her former employer and now shuttering Congress.
