La Barbecue Expands With New Service Trailer

La Barbecue is getting slightly bigger with the addition of a new trailer equipped with a commercial kitchen. This way, the trailer can offer more special items. It will have a flat top grill, a cheese melter, and a fryer. General manager Ali Clem told Eater she expects the kitchen to be fully running by Tuesday, December 1. She also said that the team decided to buy the trailer after they nixed the proposed brick and mortar on South Congress.

The popular barbecue trailer moved into its new home at the Aztec Food Trailer Park on East Cesar Chavez in September and introduced night service in October. Recent evening specials included buffalo quail, hot dogs, and house-cured pork buns.
