Stinson’s Bistro, the coffee trailer turned brick and mortar, is opening a second location in Hancock. It will debut to the public on Monday, November 30. The menu will include coffee, sandwiches, salads, pizza, and cocktails. It will be found at 3300 N Highway 35 within the Longhorn Network building.

The coffee shop left its Deep Eddy location this year because the building "needed a ton of work," according to co-owner John Thompson. The Hancock site was "an incredible deal" that he and co-owner Sheridan couldn’t give up. The Rosedale flagship opened in February 2014. There is also a third small spot within Camp Mabry, home to the Texas Military Forces and museum, open only during weekday mornings.
