Bill Dumas IN at Stiles Switch, Keenan Goldis IN at Smokey Denmark

Austin's sausage genius Keenan Goldis is taking over the reigns of Smokey Denmark when Bill Dumas departs to join Stiles Switch, as reported by Fed Man Walking. With Stiles Switch’s recent expansions (more pits, taking over adjacent barbershop for more dining room space), the barbecue restaurant needed more help. Dumas will join lead pitmaster Lance Kirkpatrick, Andy Stapp, and Alan Mykal Jackson. Dumas applied for the position because, as a longtime customer, it was his dream job. He explained to Sutter:

Two words, one name: Lance Kirkpatrick [...] I’ve been wanting to work with Lance for years.

After shuttering Goldis Sausage Co. earlier this year, Goldis joined Smokey Denmark over the summer. Recent changes included adding a specialty sausage of the month. He is known for creating hybrid sausage flavors, including apple pie and a Thanksgiving-themed one, and meaty desserts like the ice cream meat sandwich.

Dumas had been with Smokey Denmark since last summer. His last day is on Friday, October 30, and he begins at Stiles on Saturday, November 1.
