MAD Greens, the almost-11 year old Colorado fast-casual salad restaurant chain, is turning to Austin for its first Texas and second out-of-state expansion. It will open up in strange hot spot the Rock Rose District in The Domain by mid-January of next year. There are other Austin locations being worked on for the rest of next year, too. The health-conscious company will be working with local farmers and suppliers for produce. The menu includes from salads, paninis, wraps, soups, juices, hummus, cookies, all made with seasonal ingredients,

The salad eatery was founded in 2004 by Marley Hodgson and Dan Long. They announced a big expansion earlier this year throughout Colorado, including four locations in Phoenix, Arizona. This is the latest Denver-Austin restaurant exchange. Austin now has or will have Oskar Blues Brewery, Snooze, Punch Bowl Social, Snarf’s Sandwiches, and Infinite Monkey Theorum Winery. For Denver, there’s Torchy’s, Alamo Drafthouse, and Hopdoddy.
