They pulled the number of restaurants represented by each category within the states, and then compared that to the national averages per type of food. For Texas, the rest of the top five list included the runner-up Cajun, barbecue (finally), Mexican, and then, inexplicably, chicken wings, which doesn't really qualify as cuisine.
