8,000 Pounds of Brisket Will Be Served at Governor’s Inauguration Today

Rolls, potato salad, pies, and way more meat are also on the menu.

Dallas-based catering company Eddie Deen returns to cater his sixth inauguration this morning at the Capitol for incoming governor Greg Abbott. Deen had previously worked the swearing-ins for Fort Worth Star Telegram, the menu will consist of:

[...]4 tons — or 8,000 pounds — of beef brisket, not to mention 170 gallons of barbecue sauce, 17,000 yeast rolls, 4,500 pounds of potato salad, 340 gallons of beans and 2,500 pounds of coleslaw. There also will be about 1 ton of smoked chicken, not to mention some 1,700 pies, about half chocolate buttermilk and half vanilla buttermilk.

Tickets were available to the public for $10. Over 17,000 people are anticipated to attend the barbecue. Deen expects to serve everyone within the hour after the inauguration.
