Rainey Street entrepreneur Bridget Dunlap's first restaurant project Mettle is undergoing a chef shuffle. The Statesman reports that Andrew Francisco has departed the restaurant to focus on his new rice chip company Aqua Crisps. Mettle sous chef Carson Simmons will take over and re-design the menu in the coming weeks.
In addition to East Austin bistro Mettle, Francisco designed the menu for Dunlap's Container Bar food truck, and was slated to collaborate on several other restaurant projects with her burgeoning restaurant/bar group, including an East 6th Italian restaurant.
