Austin suffers no shortage of meaty restaurants, and Salt & Time takes the city's meat reverence to new heights by combining a working butcher shop with a full-service restaurant. Their expertly sourced and butchered meat is incoporated into the restaurant's menu, as is their wide selection of charcuterie. Eater photographer Robert J. Lerma catches up with the Salt & Time crew before a busy Fourth of July service below.
