White truffle season is here, and tiny Neapolitan pizzeria Bufalina will launch a truffle fest when their shipment arrives. Owner Steven Dilley tells Eater they will serve the truffles at cost. Last year a $25 truffle supplement was good for about five grams, and Dilley thinks this year it "could be closer to six."
The restaurant prepared a special menu, which should run for a week or two while supplies last. If the season remains abundant, another truffle spree will run in November. Here's a look at what they'll have on offer:
- egg yolk pasta, wild and cultivated mushrooms, foie emulsion, white truffles
- butter-toasted brioche, mornay sauce, fried duck egg, white truffles
- pizza - lardo, cream, mozzarella, fontina, white truffles
