Mettle's new chef Carson Symmonds released a significantly different new menu for the bistro, focused more on "international flavors." This means a lamb tikka masala starter and beef tongue banh mi. The menu at Bridget Dunlap's first restaurant project previously rotated quarterly, but often kept a number of the same items. Take a look at the brand new menu below.

Mixed green salad with crispy onions, goat cheese, pickled cherries, sherry vinaigrette

Lamb Tikka Masala with grilled naan, riata, and mint
Fried Boudin, cornmeal battered and served with spicy remoulade sauce, and grilled kale
Escargot topped with paella butter and puffed rice
Entrees:
Flat Iron Steak Frites served with charred garlic, poblano gratin, and a side of ketchup and aioli
Fried Chicken with seven-pepper gravy, buttermilk biscuit, and pickled jalapeño
Pork Confit Carnitas with pickled red onions, cotija cheese, cilantro, and poblano cream
Cheese Burger with lettuce, tomato, onion, and beet mustard
Beef Tongue Bánh Mi on French bread with pickled vegetables, and spicy au jus
Thyme Basted Redfish with lentils, shallot confit, and pickled carrots
Grilled Pork Chop with kimchi, and bacon vinaigrette
Warm Cauliflower with tofu and local vegetables, topped with a soy glaze
Pork and Beef Sugo over pappardelle pasta with parmesan-reggiano and fried parsley
