Republic of Sandwich Serves Up House-Cured Meats and Latkes in Rosedale

North Central Austin is now officially Austin's capital of gourmet sandwich shops.

The Northloop / Brentwood / Rosedale corridor already boasts two great sandwich shops in Melvin's Deli Comfort and Noble Sandwich Co. Perhaps the area's residents have signed some kind of pact with the sandwich-devil, because a third artisan sandwich shop has just arrived: Republic of Sandwich. The shop currently serves a small menu of classic sandwiches with a Philly accent (the Italian-style roast pork sandwich is called the 215). For breakfast, they offer breakfast tacos, bagels and omelets with a side of latkes, a rarity in Austin.

CIA-trained chef Thomas Gardner is behind the project, along with general manager Pete O'Donnell. Republic of Sandwich will cater for events ranging from bar mitzvahs to "unbirthdays" and "the zombie apocalypse." The shop is located at 2320 Hancock Drive, and current hours are Monday-Saturday 7 a.m. - 7 pm. and Sundays 8 a.m. - 3 p.m.
