Food truck mini-empire Chi'Lantro is taking their first step toward going brick and mortar by opening a tiny kitchen and take-out window at 823 Congress Avenue. Owner Jae Kim tells Eater that the inspiration for opening the space was the fact that food truck locations are coming harder to come by downtown. The Korean-Mexican fusion truck used to operated at 2nd and Congress, which is now the future home of the JW Marriott. Their new branch is only 200 square feet, and Kim says it will have "the feel of a truck."
Chi'Lantro is also hoping to expand to a larger brick and mortar restaurant in the near future, where they will serve an expanded menu based on their current catering offerings. Kim says that he's eager to expand to brick and mortar because running a food truck involves juggling everything from mechanical issues to locations. Chi'Lantro's kiosk is slated to open this spring, depending on the permitting process.
