Food-focused filmmaker Christian Remde has made a clip for The W Hotel about their new rooftop Block 21 Apiary and how the hotel will be implementing the insanely hyper-local stuff. TRACE Chef Lawrence Kocurek says that there won't be a "honey overload" on the menu but they are going to have "a lot of honey." Pastry Chef Janina O'Leary is psyched to use honey in ice cream (though it looks kind of annoying to pour), and "libationist" Joyce Garrison muddles it up. The chefs run from about minutes 2-4, for those who wish to skip the more obvious shilling/nerding out about spas.
The man behind this apiary is bee dreamer Walter Schumacher, pictured above. He runs Central Texas Bee Rescue, which sounds like something out of a Wes Anderson movie, and he claims this rooftop apiary will have a real impact on downtown Austin's flora. Shine on, crazy bee guy, shine on.
