La Patisserie to Premiere a Cronut Clone, The CroBrio

New, 15 comments

The CroBrio, Austin's first true cronut clone, will premiere this Thursday at La Patisserie. Austinist has the lowdown on this "blessed union between cronut and brioche," which will be sold with a two CroBrio-per-customer limit. Eater has learned that a dollar from each CroBrio purchase will be donated to local nonprofit Urban Roots "until further notice," not the previously reported weekend-only campaign.

Lezlie Gibbs, creator of our new local pastry god, cites the "trendy shopgirls" at Patisserie for encouraging her to develop a recipe. She combined croissant and brioche techniques to keep things "as French as possible." Gibbs respects the trademarking of "cronut," and says if she had the time, she might stand in line to get one, too. If a chef with the ability to make her own CroBrio is considering waiting in line, is anyone safe?
