Yesterday, those crazy kids over at ramen hotspot Ramen Tatsu-Ya announced on Facebook that they have a commissary kitchen in the works. This morning, general manager and Eater Young Gun Shion Aikwaya explains what it all means for the future of the restaurant.
He says that the space is mainly for prep and storage for the restaurant, explaining that they have a great need for space as they expand their hours. He says that now "with our new space and additional crew, we can make lunch an option," though they have yet to decide on a timetable for its launch. Aikawa also notes that they hope to "continue to maximize the capacity of our new available prep space by looking into new locations." Not right away, but somewhere down the line. He adds, "It's a giant step for us, and if we do it right, it will be one that will allow us to be quick, nimble, and creative."
