DIRTY SIXTH — Just got a lot more delicious. As of today, a new outpost of Gourdough's, the beloved gooey doughnut trailer and now public house, will serve sugary fried goodness at the corner of East 6th and Red River. Eater learned that the truck will be soft open "until we get the kinks worked out," with an official opening to follow. [Chowhound]

HILL COUNTRY — Supper club and butcher shop Dai Due has released their hunting school schedule for 2013. The weekends will cover butchery and various preservation techniques as well. No experience is required, but it is BYO rifle. [Eaterwire]

QUI NOTES — Tim Dornon, Qui's Chef de Cuisine, shares a sneak peek into his life in the kitchen, as well as a recipe for Lemon-Thyme Croutons. He calls Qui's idea wall "a fucking nightmare of creativity" and lets co-workers cut his hair. [Tasting Table]
