Umami Mia Pizzeria is set to open May 31st in the old Romeo's space on Barton Springs, with former Soleil chef George Thomas in the kitchen. Umami Mia is a joint venture from Austin restaurant veterans Mark Turner and Rick Engel of Lil' Woodrow's and Austin Java, and Adam Weisberg of Zen and Lucky Robot. Weisberg first talked to Eater back in June about the project, and their plans to "really reimagine the space." Now, they're ready to roll. Via a press release, the guys are really, really interested in making sure y'all are up on your umami knowledge. Says Mark Turner:
"We also want to familiarize Austin with the concept of umami. The tastes of sweet, salty, bitter and sour are familiar, but umami is the lesser-known fifth taste. Described as rounded, rich and savory, umami is found naturally in foods like ripe tomatoes, Parmesan cheese and mushrooms. Umami Mia Pizzeria spotlights the umami taste in every dish."The site boasts a nearly 2,000 square-foot interior and 2,500 square-foot patio on which one might enjoy an Umami Mia "Mexitalia Martini," made with (deep breath) "Patron Silver, Grand Marnier, lemon lime soda, orange juice, 1888 hand-pressed olive juice, olive and mozzarella ball."
