Eden East at Springdale Farm, the "signature restaurant" from farm-focused chef Sonya Coté, soft opens this weekend with one-service, reservation-only seatings on Friday and Saturday evenings.
The menu features smoked pork terrine, lamb ribs, rabbit and goat milk panacotta. Thrillist has a pretty, food-porny look at some of Coté's potential dishes—the menu changes daily—including a mountain of pulled pork topped with onion rings.
After this weekend and next weekend's soft opening dinners, Eden East will open Fridays and Saturdays from 6 p.m. to 10 p.m. with two seatings each night, and serve brunch on the weekends from 11 a.m. to 2 p.m.
During SXSW, Coté filmed a video with SHFT (something something "the lens of sustainability") and Ford at the farm, and it is all carefully crafted, idyllic and etc. and so on:
