What Does Barbecue Mean To Austin Pitmasters?

New, 8 comments

One member of the Dallas-based Texas BBQ Posse has begun shooting a series of instant-film portraits of barbecue pitmasters, and he's started by photographing some faces Austinites would recognize through any smoky meat haze. Photographer Daniel Goncalves explains via the Posse:

The idea is to make a portrait of a pitmaster, hand over the print, have them pick a color sharpie and write what BBQ is to them on the photo. I tell them to "write whatever you like, no restriction," and they immediately start thinking and writing. It's been a fun and interactive project which lets the pitmaster make the photo an even more personal portrait of themselves.
Austin pitmasters included in the project so far include Lance Kirkpatrick of Stiles Switch BBQ & Brew, who wrote that barbecue "is the national food of Texas," Tom Micklethwait of Micklethwait Craft Meats, who wrote that barbecue is "Sunday Afternoon," and John "I'm A Cook" Mueller, who wrote: "BBQ is me."
