Chef Sonya Coté, of Hillside Farmacy and, once upon a time, East Side Showroom, fame has announced plans to open a "signature restaurant," to be called Eden East at Springdale Farm. Located on the farm grounds, Eden East will use ingredients "harvested just hours before hitting the plate." From the official press release:
Coté's commitment to adapting her menu with the seasons is clear: the day's fresh, local ingredients will take center stage, paired with produce, fish, and fowl from local artisan producers. Eden East's custom dinner experience will deliver prix fixe, multicourse meals bringing guests into the aura of the farm. Patrons can dine al fresco -- just feet away from where their food was raised -- or inside the cozy confines of a 1920's farmhouse surrounded by an exquisitely decorated pecan orchard.The restaurant will be centered around a "living chandelier," designed by Mickie Spencer in a 40-foot elm tree, "fruited with over sized light bulbs, flowing strings of crystal and huge, handcrafted wind chimes."
