In this video, Austin's own Top Chef winner Paul Qui sits around a table with some dudes, giving advice on to "do it like a local" at SXSW, recommending Hopdoddy, Home Slice, Sway, Barley Swine, Ramen Tatsu-Ya, Uchi, Uchiko. He also (naturally) recommends SouthBites, his curated collection of "the best trucks in the state" to be parked near the Austin Convention Center.
Qui also says that "hopefully my restaurant should be open by that time, Qui should be open by South By," but considering he's currently getting a fish sauce tour of Vietnam and not scrambling in a frenzy around 1600 East Sixth Street, y'all can probably take his projection with all the grains of salt—though we'd love to be all kinds of wrong about that.
