Looks like Umami Mia Pizzeria, opening in the former Romeo's space on Barton Springs, has projected a May opening date. And it appears chef George Thomas is also hard at work on menu development, per this Facebook photo of a rather decadent-looking pasta dish: "Carbonara noodles with Fontina Cream, Pine Nuts, Fresh Herbs, Lemon, Pancetta, Garlic, Egg Yolk & Parmesan."
