Austin Diners Are Far Less Fancy Than Houston Diners

Austin diners all be eating like this, and Houston diners all be eating like this! Staff at the Uchi group tell Eater Houston that they've been surprised by the differences between the diners at the now one-year-old Houston location and those they're used to in Austin, as Houstonites are fancier and more leisurely.

Houston's chef de cuisine Kaz Edwards says Houstonites "like to dress up and go out, spend a lot of money, drink a lot of wine." Austin folks also spend less time lingering over dinner, said general manager Dan Allen:

They sit considerably longer. That messed us up in the beginning. We were planning on a certain length of dining, and planned our reservations around that. People were sitting a half hour, hour, two hours longer than what's normal. That backed us up; that was a big issue for us in the beginning.
Edwards also characterizes Austin diners as "super casual, super laid back."
