At this year's "Our Barbecue, Ourselves" symposium at the University of Texas, barbecue fans may or may not be encouraged to use a hand mirror to examine the most intimate parts of their relationship to smoked meats. The third annual Foodways Texas symposium will "explore the past, present and potential of smoked meat in Texas and its intimate connections to Texas cultural history and identity" with the likes of Aaron Franklin, Jesse Griffiths and Robb Walsh. But only if you've got $280—or $250 for Foodways members. [Eaterwire]
