Bon Appétit has named Franklin Barbecue, Uchi and Uchiko to its list of the 20 "most important" restaurants in the country. Tyson Cole's growing group of Japanese restaurants and Aaron Franklin's east side barbecue joint famous for its daily lines join Momofuku and Le Bernardin in New York, Alinea in Chicago and Animal in Los Angeles on the list.
