Texas Monthly talks to San Antonio bartender Jeret Peña, formerly of the Esquire Tavern and currently of The Brooklynite, his first own-and-operate attempt. On Texas booze: it's "just priced too high, which means I have to turn around and charge $20 for a cocktail." He says to look out for Austin's Genius Gin: "I think it will be the first top notch craft gin."
