JMueller BBQ just scored a big endorsement from Daniel "BBQ Snob" Vaughn, the Dallas-based barbecue fiend called "the Yoda of barbecue" by none other than Anthony Bourdain. Vaughn's been tracking John Mueller's progress since he opened his trailer on South First, and after visiting with Bourdain back in March along with another undercover visit, he's upgraded the South Austin joint's rating to six stars.
That puts JMueller BBQ in excellent company: other Texas joints scoring six stars from Vaughn are Franklin Barbecue, Louie Mueller in Taylor and Fargo's Pit BBQ in Bryan. Vaughn, who admits to being buddies with John Mueller, says he managed to sneak in for an incognito tasting and all was way, way more than well.
A couple thick slices of the fatty beef had a soft interior of smoky meat and tender fat while the thick bark on the exterior was stout and even a bit crispy. On a previous visit I was more enamored with the lean beef, but on this day the moist brisket was easily its equal. One item that had improved considerably was the homemade sausage.Vaughn's book, Prophets of Smoked Meat, will be released on Bourdain's Ecco imprint in 2013.
