The veteran restaurateurs behind Austin Java, Uncle Billy's, Lil' Woodrow's and Zen will open a new pizza joint called Umami Mia Pizzeria in the old Romeo's space on Barton Springs in September.
Zen owner Adam Weisberg tells Eater Austin they're going to "really reimagine the space" for the restaurant, where they'll focus on pizza but also serve "really special salads and sandwiches" and noodle dishes.
"We're really going to change the flow of the restaurant," says Weisberg, and shift the entrance away from Barton Springs so they can "engage the patio." He says folks can look forward to "a lot of communal brunches and Italian sangrias," as well as a slice window and live music--especially "listening to some ACL on the patio."
As for who the chef behind the project is, Weisberg wouldn't say just yet, hinting only that "He's somebody that does have a really good name in the Austin market," and that they've been working on tastings for about four months.
Feel free to engage in rampant speculation as to the new chef's identity in the comments.
