Olivia and Lucy’s Fried Chicken Owner/Chef James Holmes wants you to know he’s not just about frying chickens. He also loves their eggs! Today Holmes and his crew start construction on a new chicken coop for Olivia, converted from a vintage Lone Star beer delivery truck. The delightfully quirky coop will live behind Olivia and will house about 20 hens, with room for 45, says Liz Baloutine of Seedlings Gardening, who designed and maintains Olivia's garden and plans to do the same for the coop. With a large yard and an enclosed, predator-proof tunnel partway circling the truck, it will practically be a playhouse for the birds. Holmes will experiment with different feeds to affect flavor, and the restaurant intends to start serving fresh eggs from the backyard in about five months.
