Fresa's Chicken Al Carbon, the new drive-through Mexican chicken project from Larry Maguire (Elizabeth Street Cafe, Lamberts, Perla's) and Margaret Vera, the owner of now-defunct East Austin restaurant Cafe Azul will open mid-April at Lamar Boulevard and 9th Street downtown. Per this Craigslist ad, they're looking for managers and will open their doors April 16th. Back in November, Maguire told Eater Austin of the project, which he's working on with Azul's Vera, his project manager at Elizabeth Street:
"Margaret Vera, one of the partners in our hospitality group, brought the idea to us when we hired her as the project manager for Elizabeth Street. Together we have finished the Fresa's concept and will open it together; it's going to be great. We'll have all natural chicken, split, and then grilled over coals. Once that gets up and running we already have plans to open a second location of that concept down here next to Elizabeth Street."The Craigslist posting elaborates on the menu:
"Fresa's Chicken al Carbon is an Austin owned Drive Through Restaurant serving charcoal grilled locally grown chickens, freshly prepared tortas, salads, sides, home-made ice creams, and choice beer & wine.
We will offer up the most humanely & sustainably pasture raised birds. Marinated in achiote and fresh squeezed citrus or fresh oregano & garlic, grilled slow over hardwood charcoal, and served with freshly made corn or flour tortillas.
