Young chefs have been clamoring to be named to Food & Wine's "best new chefs" list for nearly a quarter century, but never have pastry chefs been part of the mix until this year. In 2012, the Food & Wine editors decided they were "ready for dessert," and have named La Condesa's Laura Sawicki to their inaugural class of best new pastry chefs.
Sawicki's standout dessert? "Hoja Santa: semifreddo with brandied cherries, almond brittle, chocolate sauce and birch beer marshmallow crème." The editors' notes?
Great execution and use of interesting/unique Mexican ingredients like the herb hoja santa.Congrats, Laura!
