In an ongoing public television-produced series called BBQ With Franklin, reigning king of smoked meats Aaron Franklin explains, step-by-step, how he makes the barbecue he's become famous for. So far: he's tackled proper brisket selection and butchering instructions, the finer points of smoker modification and this week's installation, an exegesis on wood.
He also talks to WaPo's Jim Shahin this morning about the series, who asks whether it's a huge mistake to share his secrets. Franklin's response? "I don't think that many people are going to spend 20 hours a day doing what I do."
