Time and again we've had our heart broken by the perpetually soon-to-open Easy Tiger, and we hope this time it's different. According to a Facebook update, the restaurant has passed its final inspection and "Drew Curren, David Norman and Billy Caruso will be busy training staff and perfecting recipes on site for next few days," with an opening date "prob within 2 weeks." That's just seven months after Easy Tiger's original opening projection of July 2011, so there's been plenty of time to work up an appetite. [Eaterwire]
