With the Uchi Houston opening on the horizon, Uchi/ko's Phil Speer talks about pastry chef shuffles among the restaurants on his blog. Monica Glenn, currently pastry sous at Uchi Austin (it's called that now, it seems) will be pastry chef at Uchi Houston. Also, Uchiko pastry cook Andrew Lewis got bumped up to pastry chef and will remain at Uchiko. [Philip Speer]
