Sully's Side Bar, an offshoot of Sullivan's Steakhouse, will open August 31 with a Mexican-inspired menu and also guacamole with smoked gouda in it. Located next to the steakhouse, the menu by executive chef Carlos Garcia makes nods to his childhood home of Juarez and is inspired by his grandmother's cooking. (On trend; see also Chonita's.)
Sully's Side Bar will be open Monday and Tuesday from 11:00am to 12:00am; Wednesday through Friday from 11:00am to 1:00am, Saturdays 3:00pm to 1:00am, and Sundays 3:00pm to 12:00am. Here's a press release:
New Sullivan’s Steakhouse Venture, Sully’s Side Bar, Launches August 31st with Tacos, Tequila and Taps
Executive Chef Carlos Garcia serves up Sullivan’s quality on Mexican-influenced menu
Austin, TX— On August 31, Sullivan’s Steakhouse will introduce a new way for downtown goers to experience the quality and hospitality it has come to expect with Austin’s first steakhouse. Sully’s Side Bar – Tacos Tequilas and Taps, located in the former Ringside space at 300 Colorado Street, will serve a Mexican-inspired menu created by Executive Chef Carlos Garcia along with a selection of artisanal tequilas, local beers on tap and its own selection of inspired hand-crafted cocktails. The restaurant, attached to Sullivan’s, will be open for the lunch, dinner and late night crowds.
Garcia’s authentic Mexican culinary roots inform the menu at Sully’s Side Bar, infusing his rustic, innovative approach into a fun and inviting setting. The menu features a variety of craveable snacks, such as the Smokey Guacamole with smoked gouda, freshly prepared tacos including a moist brisket taco –a nod to Sully’s steakhouse roots— hearty salads and a couple of desserts for those with a sweet tooth.
“Creating this menu has been a great experience, reminding me of the days I spent learning to cook with my grandmother in Juarez. She is the reason I started cooking in the first place, Garcia recalls. “I remember gathering fresh ingredients and helping her roll tortillas and prepare large meals for the family. Its been great to share that side of my culinary background.”
The bar will offer artisanal tequilas, independent brews and Mexican imports. Additionally, guests will find tequilas and Tito’s vodka flowing freely from the Side Bar taps. Crafted cocktails such as the True Austin Daiquiri with Treaty Oak Texas Rum and jalapeno and the Muddled Strawberita, the Side Bar’s version of Strawberry Margarita serve as signature cocktails along with Sully’s featured “Side Shot” El Corazon with Pomegranate, Passion Fruit, Blood Orange, and Agavales Silver Tequila, a Side Bar of the popular “Knockout” next door.
The vibe at Sully’s is carefree and casual and the décor is bright and lively with a visual nod to the Mexican influence on the menu. The substantial bar serves as the centerpiece of the restaurant, which also houses large leather-clad booths, and ample indoor seating complete with two 8-seat community tables. Large rolling doors slide sideways allowing for an airy open feel.
The delicious high quality ingredients that are the hallmark of the Sullivan’s menu will be evident with Sully’s offerings as well. “Sullivan’s prides itself on the quality of our ingredients and our hospitality,” comments General Manager, Shane Lambert. “We are excited to put the same passion into the casual and fun atmosphere at Sully’s Side Bar.”
