The Statesman profiles Chuy's, the Austin-based Tex-Mex restaurant that will have 31 locations by the end of the year. They seem to be having some identity issues: CEO Steve Hislop says, "We're a localized brand; we're not a chain...We don't want to be a Chili's. We don't want to be a (TGI) Friday's. We don't want to be one of the restaurants that look the same. I don't want to be thought of as a growth company or a chain. At all. Whatsoever." [Statesman]
