So, how did chef David Bull celebrate his restaurant Congress receiving Statesman critic Mike Sutter's first five star review? With cupcakes and champagne, naturally. The Austonian chef told us the rating "made for a very nice day" (we bet), and went on to describe how it changes the game:
"We were already confident in the product we serve with or without any stars. However, because of the 5 star rating and now being the only 5 star restaurant in the city (and being Mike Sutter's first 5 star rating and that we are only 12 weeks old) — it completely changes everything.
To start with 4 stars and work to get 5 is very different than to start with 5 and make sure that we keep it. It puts Congress into its own category which automatically comes with heightened expectations and awareness. It creates a higher level of focus from all aspects.
Bull also said the review is "a big thank you to the entire team."
