Barley Swine has added pastry chef Kyle McKinney to their team and, as would follow, is expanding their pastry menu (they previously had no pastry chef and a choice of two desserts). McKinney has previously worked at the Hilton, the Mansion at Judges Hill and the Four Seasons.
He also apparently used to work as a sushi chef at Maiko Sushi Lounge and Mizu: Prime Steak & Sushi, and thus is into exploring sushi/pastry combos. Interesting? No word on whether we'll see any of those at Barley Swine; McKinney's contributions to the menu thus far include a Olive-oil Financier with thyme infused apples, brown butter ice cream, almond nougatine and his take on a Crunch Bar, which is served with a caramel cremeux and honey-almond nougat.
