University of Texas baseball coach Augie Garrido visits Uchiko and does a cooking segment with chef Tyson Cole. If you have been wondering what you've been missing not having the Longhorn Network, here you go. Who needs to see all those silly football and volleyball games, right?
Garrido has started this regular segment visiting restaurants around town, so far stopping by Rudy's BBQ, Hopdoddy, Garrido's, and now Uchiko. Suck it Time Warner. Sure, you let us all watch Top Chef Texas on Bravo, but not Home Plate with Augie Garrido on LHN? What gives?
In this segment, Tyson Cole makes two dishes, one hot and one cold:
First: salmon, pear, blueberries, kale, garlic, quinoa, and green tea oil
Second: pork belly, scallions, fennel, gastrique, coriander blossoms, and candied onions
The best quote from chef Cole, "Town Lake sashimi - we tried that and it didn't work too well," on sourcing local fish for sushi.
