Houston writer Robb Walsh visited an old school barbecue in rural Texas, learning the stories of this tradition before we had refrigeration. He went to the Sons of Hermann Lodge in Washington, TX and hears from Bubba Roese ("the mayor") who says that they rarely smoked beef back in the day, as they would usually slaughter the animal on-site and that was too much meat to handle with no cold storage.
