Dallas Caterer Making 600 Briskets For Inauguration Picnic

So, how much food does one make for a 10,000 person barbecue? Dallas caterer Eddie Deen is making 600 briskets for the Texas Governor Inauguration celebration on the capitol lawn January 18. He's also making 1500 pounds of grilled chicken, 1600 pounds of smoked jalapeno sausage, 120 gallons of barbecue sauce, 360 gallons potato salad, 250 gallons coleslaw, 300 gallons pinto beans, 10,000 yeast rolls and 10,000 mini-pies in vanilla buttermilk and chocolate pecan. That's a lot of food, but apparently it ain't no thing for Deen, has catered three state inauguration picnics previously and who boasts a record of serving 15,500 people in 38 minutes. Tickets to the event are free and still available.
